Ricotta Toast

With the change of season (HAPPY FALL BTW!!) I have had the urge to clean up my eating habits. Life is moving fast around these parts and I have found myself reaching for things that are easy, and often boring when it comes to my lunches. Gone are the days where I had ample time to prep and cook a nice lunch and I am not keen on fast cold cut sandwiches or an egg every day — the the protein is definitely key!

After a little Pinterest perusing I decided to switch things up, while also keeping things super simple and easy.

Fancy toast has entered the chat.

ricotta toast — lynds bianco

This isn’t as much of a recipe per se as it is an idea, but it has quickly become my favorite meal so I figured I would share!

Ricotta Toast

Ezekiel bread
Ricotta
Tomatoes
Arugula
Olive Oil
Pink Salt
Black Pepper

Toast Ezekiel bread, spread ricotta on toast. Add sliced tomatoes and arugula. Drizzle with olive oil and top with pink salt and black pepper.

The most time consuming part is waiting for the toast and it is delicious! Ticks all the boxes for me and I made this several days in a row at this point. The best part is that you can switch this up any way you’d like with whatever you have on hand. Today’s toast is set to include cucumbers instead of tomatoes and without either I’m thinking a nice drizzle of honey in place of olive oil. We shall see!
