Just in time for the holiday season, a cocktail that doubles as dessert! I give you the mouthful that is the Bourbon Pumpkin Pie Ice Cream Float.
A few years ago my husband and I got really into making cocktails at home. Going out for drinks in the city can add up quickly. After reading menus time and again I realized two things, one – that a lot of the ingredients could already be found in my pantry, and two – that the recipes themselves were pretty easy to put together. A few Google later searches I decided to give it a try and ran through all of the classics. Then we started to get creative, mixing and matching recipes and trying new ingredients.
One of the things I love most about creating cocktails is trying new things! With baking, it’s such a science, the smallest misstep can ruin a recipe. You have a little more leniency with cooking and when it comes to cocktails, while it’s certainly possible to ruin them, you can always add a bit more of something else to try to recover and reset.
The idea behind this drink stemmed from your classic smash, which is bourbon, muddled citrus, simple syrup, and sometimes mint, and somehow rolled down hill into a spiked dessert. No complaints here!
To make this cocktail from the comfort of your own kitchen, start by adding pumpkin puree to a large glass. Add bourbon, simple syrup, honey, and cinnamon and stir until combined. Once you have your base, add a dash of vanilla and chocolate bitters (A quick note: the chocolate bitters are not crucial to the recipe so if you are missing them don’t worry!). And finally, add a scoop of chocolate ice cream to your serving glass and pour the pumpkin bourbon mixture over it, top with soda and enjoy!

Bourbon Pumpkin Pie Float
Ingredients
- 1 tbsp Pumpkin Puree
- 1.5 oz Bourbon
- 1 oz Simple Syrup
- 1/2 tbsp Honey
- 1/4 tbsp Cinnamon
- Dash Vanilla
- Dash Chocolate Bitters
- 1 scoop Chocolate Ice Cream
- 1 oz Soda
Instructions
- Add pumpkin puree to a large glass or shaker.
- Add bourbon, simple syrup, honey, and cinnamon.
- Stir until combined.
- Add a dash of vanilla and chocolate bitters and stir once.
- Add one scoop of chocolate ice cream to your serving glass and pour pumpkin bourbon mixture over.
- Top with soda.
